- 2 x 120g of Galbani Fresh Mozzarella
- 200g rocket leaves
- 2 fresh mangoes
- 2 avocados
- Juice of 2 limes
- 1 fresh red chilli, cut into fine rings
- 2 small white onions, cut into rings
- Extra virgin olive oil
- De-stone avocado and mango, peel and cut into thin slices.
- Thinly slice the Galbani Fresh Mozzarella and begin assembling the salad on a serving dish.
- Add rocket to centre of dish and arrange avocado, mango and Galbani Fresh Mozzarella around the edges of the dish, alternating as you go.
- TO MAKE THE DRESSING
- Mix the chilli and lime juice in a small bowl then whisk in the olive oil.
- Drizzle dressing over the salad and garnish with onion rings.
