- 2 x 120g of Galbani Fresh Mozzarella
- 4 thick slices of crusty country style bread
- 2 tomatoes
- Salt and freshly ground black pepper to taste
- Fresh oregano leaves
- Extra virgin olive oil to serve
- Lightly toast bread on both sides under the grill.
- Chop Galbani Fresh Mozzarella into small bite sized chunks.
- Chop tomatoes into chunks.
- Mix together the Galbani Fresh Mozzarella and tomatoes in a bowl.
- Divide mixture evenly into 4 portions and top each toasted bread slice.
- Season with salt and black pepper.
- Top with fresh oregano leaves.
- Drizzle with olive oil to serve.
